Oven Baked Flounder
- 2 tablespoons olive oil
- 4 flounder, cleaned and prepared
- salt and pepper, to taste
- 100ml white wine
- 100ml fish stock
- squeeze lemon juice
- 1 sprig dill, chopped
- Preheat oven to 200 degrees C.
- Line a baking dish with foil and brush with half the olive oil. Lay fish in dish then sprinkle with salt and pepper. Drizzle with olive oil then pour over the wine, stock and lemon juice.
- Sprinkle on the dill then bake in preheated oven until done, about 10 minutes.
